Varietal composition : Merlot
Merlot is “happy” and generous when its roots grow in cool, deep soil. That's why we chose our small clay plots for this grape variety. This grape variety also needs the full attention of the winemaker during the harvest, as the berries are very sensitive to oxidation. To maintain the freshness of the fruit, the Merlot is harvested very early in the morning, and berries are immediately transferred to the nearby cellar, where a fruity, low-temperature maceration begins, with aromas of red cherry, raspberry and redcurrant. This predominantly Merlot wine is round and fleshy.
A perfect accompaniment to entrecote steak would be parsley, roast beef or duck breast.
Cheeses should be fresh and not too mature.
